Fish fry With Italian Seasoning:

Ingredients:

fish fillets 2
Olive oil 4 tbsp
Italian seasoning 1 tbsp
Salt to taste
Garlic chopped 4 cloves
Lemon juice freshly squeezed 3 tbsp
White vinegar 1 tbsp
Butter softened 2 tbsp
parsley chopped 2 tbsp
Black pepper powder 1 tbsp

Instructions
Season the top of fish fillets with Italian herb seasoning, black pepper and salt (generously).
In a large skillet (large enough to fit 2 fish fillets), heat 2 tablespoons of olive oil on medium heat until heated but not smoking. To the hot skillet with olive oil, add fish fillets Cook the fish for about 3-5 minutes on medium heat, making sure the oil does not smoke, until lightly browned.
Flip the fillets over to the other side down (add more oil, if needed). Cook for another 2-4 minutes on medium heat (to prevent oil from burning).
Remove the skillet from heat, close with the lid, and let the fish sit for 5-10 minutes, covered, in the skillet, until flaky and cooked through completely.
After the fish is cooked through, off heat, using spatula, carefully remove fillets to the plate. Carefully remove or scrape the fish skin off the bottom of the pan, making sure to leave all the cooking oils in the pan.
Add diced garlic, lemon juice, and vinegar to the same pan with oil. Cook on medium-low heat for about 1 minute, until garlic softens a bit. Remove from heat. Add 1 tablespoon of chopped parsley, and 2 tablespoons of butter, off heat, to the sauce, stirring, until the butter melts and forms a creamy mixture. add salt and pepper, Mix well.
Spoon sauce over the fish, top the fish and sauce with the remaining 1 tablespoon of parsley and serve with salad etc.

Mini Cake with strawberry jam:

Ingredients:

Butter softened ½ cup
White Sugar 1 cup
Eggs 2
Vanilla extracts 1- ½ tsp
All purpose Flour 1- ¾ cup
Baking powder 2 tsp
Salt ½ tsp
Milk ½ cup
Icing sugar for dusting as required
Icing cream for garnishing
Strawberry jam for filing
Instructions:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
in a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing until fully incorporated; stir in the vanilla. Combine the flour, baking powder and salt, sift and add stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added. Spread the batter evenly into the prepared pan.
Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack.
Cut the cake in round shape and spread the jam and cover with another round on top of it, icing the cake with icing cream on top of the cake.
Garnish with fresh strawberries. Dust with icing’ sugar right before serve.

Tikka Boti Paratha Rolls:

Ingredients:

Chicken Tikka Boti ½ packet
Onion rings 1
Coriander 1 tbsp
Lemon ¼ tsp
Salt to taste
Parathay 4
Ingredients for Mayo sauce

Yogurt 4 tbsp
Mayonnaise 2 tbsp
Green Chutney 1 tbsp

Take a bowl add onion rings, coriander leaves, lemon juice and salt Mix well set aside.
Take a small bowl add yogurt mayonnaise and green chutney and mix well.
Fry the chicken set aside. Till Golden brown put koyela and cover the chicken for few minutes, if desired.
Take a large Pan or Tawa hot the tawa and cook the Paratha with 1tbsp oil or ghee. Cook until golden brown
Add chicken pieces on coked Parathas, Mayo sauce and salad, fold the Paratha’s .
Enjoy with green chutney.
