Welcome to my week in Bari, Italy — a focaccia capital of the world! Bari is the “big city” just to the south of where I live, in Trani. This is a main focaccia hub of Italy! Bari is in the southern Italian region of Puglia, and THIS focaccia — “focaccia barese” — is known for being CRISPY and CRUNCHY, and yet still SOFT on the top. The traditional focaccia from Bari also includes green olives (with the pits!) and cherry tomatoes. It is really something special (perfect with a Peroni beer) 😊

I had the help, in this focaccia hunt, from Tommy Cavalieri, a man from Bari who is also an incredibly talented sound engineer. (Check out his studio Sorriso Studios I was in Bari this week to record the audio book for my book (coming out this April!) called “Cheese, Wine, and Bread: Discovering the Magic of Fermentation in England, Italy, and France”! Tommy was the best guide!! He’s incredibly passionate about his city’s focaccia, and you’ll learn so much about the art of it from him!
