Full of earthy, savory flavors, this classic one pot sausage casserole is so rich you will have to be careful someone doesn’t try to mug it. Serve with polenta, pasta or my favorite, mashed potato! This is a real crowd pleaser and kids will love it! Ingredients Below:

50g dried porcini mushrooms
1 ½ tbsp olive oil
12 good-quality sausages (you can use herby / spicy ones too)
100g diced pancetta / bacon
2 large onion, chopped
5 garlic cloves, crushed
3 fresh rosemary sprigs, leaves chopped
2 tsp fennel seeds, lightly crushed
1 tsp chilli flakes
350g portobellini or brown mushrooms, thickly sliced
200ml red wine
2 tbsp tomato purée
700ml passata
200ml beef stock
100g sun-dried tomatoes in oil, drained and sliced
2 bay leaves
Handful fresh flatleaf parsley, chopped
