In episode #1 I will be showing you 2 super easy dishes, one meat based with vegetables and another easy pasta sauce recipes, suitable for both baby and adults!

One Pot Chicken Dish

INGREDIENTS:

Extra virgin Olive Oil or Sunflower Oil
50 g chopped onion (Half an onion)
100 g chicken breast, cut into chunks
1 medium carrot, peeled & sliced (approx 60g)
300 g sweet potato, peeled & chopped (Approx 1 medium sweet potato)
1 small apple, peeled & chopped
200 ml unsalted chicken stock
40 g frozen peas
(Optional- like any ingredient of course) Soft cheese or any cheese your baby prefers

METHOD:

1.Heat the oil in a saucepan and sauté the onion for 3-4 minuted until softened

2. Add the chicken to the pan and sauté for 3-4 mintues

3. Add the carrot, sweet potato and apple, pour over the stock and bring to the boil

4. Simmer, covered with a lid, for about 12 minutes or until the chicken is cooked through and the vegetables are soft

5. Add the frozen peas and simmer for a further 3 minutes

6. Purée in a blender to the desired consistency

7. Add soft cheese or any preferred cheese your baby enjoys

PASTA SAUCE DISH

INGREDIENTS
Extra virgin Olive Oil
1 half Onion
1 clove garlic
Mixed Herbs
30 g penne pasta or spaghetti
1 tinned chopped tomatoes
1 tinned Tuna
1/2 low salt vegetable stock
Parmesan Cheese

METHOD

1. Heat the oil in a saucepan and sauté the onion and garlic for 3-4 minuted until softened

2. Add the chopped tomatoes to the pan. Leave to cook on a low heat.

3. Add mixed herbs and 200 ml of low salt stock

4. Meanwhile, bring a small pot of water to the boil. Add the pasta and cook according to the packet instructions- until the pasta is nice and soft.

5. Once the pasta is cooked. Add the tuna to the sauce, cook for 1/2 minutes

6. Drain the pasta

7. Add pasta to the sauce

8. Purée in a blender to the desired consistency

9. Add soft cheese or any preferred cheese your baby enjoys
