Neapolitan Cuisine alla Marechiaro
Capellini Sammarone
1 cup light olive oil
8 garlic cloves, smashed
1/4 teaspoon black pepper
1 tablespoon salt
3 large tomatoes
6 oz jumbo lump Maryland Crabmeat
24 oz cup water or vegetable stock
1 pinch red pepper
1 bunch arugula
Pinch or salt
1 bunch freaks Basil
2 lbs of Gulf or South American shrimp
1 pound shiitake mushrooms (sliced) optional
5 sun-dried tomatoes
1 pound capellini
In a large pan, over medium heat, saute garlic in the oil. After it browns lightly, add tomatoes. Saute and then add water to the sauce. Cook at a fast boil to reduce slightly. Add the spices and the mushrooms. In a separate pot of boiling water, add a pinch of salt and capellini. Cook for about 4 minutes – it will be about halfway done. Strain capellini and add to the sauce with the arugula and sun-dried tomatoes. Let it cook
