Medium pot 3/4 filled water
2 lbs of potatoes boiled 3/4 cooked (use ricer)
strain potatoes in colander
rest it steaming and dry then proceed to start ricing
1/2 cup fresh mozzarella (chopped finely )
1/4 cup of Parma Prosciutto (chopped finely)
1/2 cup your choice Parmigiana or Pecorino grated cheese
Salt for water
Pinch’s fine black pepper
1 tablespoon Italian parsley chopped finely
2 yolks
1 egg and rest of the whites rapidly mixed to a light texture
24 oz of unflavored breadcrumbs sifted finely
