“Chiacchiere di Carnevale” also known as Cenci, Crostoli, Bugie, Frappe, Sfrappole or Galani. They’re called by different names depending to the different regions of Italy and are prepared during the Carnival season that tipically runs from the end of January to half February.
Chiacchiare are crispy, so deliciously irresistible and (believe me) they’re really easy to make.
The secret in making them very crispy is rolling up the dough as thin as possible.

Ingredients:

480 grams all purpose flour
1/2 teaspoon salt
40 grams granulated sugar
2 eggs
20 grams butter, melted
1 tablespoon lemon zest
140-150 ml prosecco or sparkling white wine
Sunflower oil for frying
Powdered sugar for dusting
