Cantina D’Isera Trentodoc Brut DOC

In 1907, when the Trentino region was still under the rule of the Hapsburg Empire, local wine producers created the Cantina d’Isera cooperative winery. Since 2004 the winery has unreservedly dedicated itself to producing Trentodoc in its Extra Brut, Brut and Riserva varieties. Today all 200 members send more than 25,000 quintals of prized grapes to the winery and the fermentation process is carried out under strict supervision in order to obtain high quality wines.

Cantina D’Isera Trentodoc is one of only 57 Trentodoc producers that produce this special sparkling wine in the Trentino Province of northern Italy. The cool temperatures from the Dolomites combined with the mild temperature of nearby Lake Garda form distinct characteristics; and the significant diurnal temperature variations, typical of the Trentino territory, allow the grapes to develop acidity and great aromatic complexity.
According to regulations, Trentodoc can be produced as white or rosé in the following versions:

Brut: at least 15 months aging on its lees
Millesimato: at least 24 months aging on its lees
Riserva: at least 36 months aging on its lees
While regulations stipulate a minimum number of months aging, in reality Trentodoc producers age the wine on its lees for much longer. A long aging is synonymous with high quality for classic method production.
This particular wine is a Brut so it would be aged a minimum of 15 months, and the resulting wine has 12 g / l of residual sugar, which is middle of the road for dryness like that of Prosecco. The flavor of the wine is of fresh peach with citrus, and it has a nice dry finish. If you find that Prosecco is not to your liking, and you prefer a sparkling wine with more of a dry finish, you may find this wine to your liking.
