Spinach and ricotta cannelloni the original recipe .
Quick dinner and healthy .
It’s one of our favourite dish .
Ingredients:
24 cannelloni or less depend how much you fill them .
300 g fresh spinach
2 onions
6 tbsp olive oil
2 plum tomatoes tins
1 cherry tomatoes tin
6 tsp chopped garlic (I used 8 garlic cloves )
500 g ricotta
3 handfuls of mozzarella grated
2 mozzarella bolls
20 g Parmesan grated
2 eggs
1 tsp nutmeg powder
1 tsp basil ( I didn’t had fresh so I used dried basil , if you have fresh go for it is making such a big difference)
Salt and pepper
4 bay leaves
Method :
First step is to peel and chop the onions and garlic .
Wash the spinach and chop it .
In a deep pan heat up 3 tbsp of olive oil along with garlic and the spinach . Sauté for 2 minutes and then cover with a lid and let it steam for 3-5 minutes seasons with salt , black pepper , nutmeg and basil . Stir well and set aside in a colander this will speed up the cooling process . Set aside .
In the same pan heat up 3 tbsp of olive oil and let it fry for a min the garlic and bay leaves . Mix in the onions and fry for 5 minutes . Pour the plum tomatoes and slowly try to mash them with the spatula . Mix well and add the cherry tomatoes and let it cook for 20 minutes . Season with salt , black pepper and basil . Set aside .
To make the filling , in a large bowl crack 2 eggs with salt and pepper and mix them a bit then add the ricotta cheese , the spinach and the juice from the spinach , Parmesan and mozzarella. Mix well .
In a pipping bag put the spinach and ricotta mixture and cut the corner 1 cm wide .
In a tray place baking paper and drizzle a bit of olive oil .
Start by filling the cannelloni tubes with the mixture .
Put all in line nice and spread the tomatoes and onions .
Cut into slices the mozzarella bolls and place them on the top .
In pre heated oven at 200^ C place the tray for 20 minutes . Remove and cover with aluminium foil and leave it for 20-25 minutes more .
Remove the foil and leave it to roast a bit more for 5-10 minutes .
Ready to serve !
