After 18 years, my Tampa Bay Buccaneers are back in the Super Bowl baby! And I’m ready to drink some wine and make some Touchdown Meatball Sliders (truth be told, they really are for Eric). Meaty, saucy, gooey, italian awesomeness for your Super Bowl party.
Meatball Sliders
Meatball Ingredients:
1 egg beaten
½ shallot bulb, finely minced
2 garlic cloves pressed
¼ Italian seasoned bread crumbs
3/4 lb grass feed ground beef
1 link sweet Italian sausage, squeezed out of the casing
½ cup parmesan reggiano
1 teaspoon dried oregano
Kosher sea salt + cracked pepper to taste
¼ cup olive oil

Marinara Ingredients:
1 – 25oz can San Marzano Tomatoes – peeled for rustic, crushed for finer texture.
3 garlic cloves minced
2 Tablespoons tomato paste
¼ cup chopped fresh basil
½ cup extra virgin olive oil
Kosher sea salt + cracked pepper
Marinara Directions:
Sauté chopped garlic in oil – make sure it doesn’t brown. Place in crushed San Marzano peeled tomatoes. Start adding salt, pepper and tomato paste. Keep tasting along the process and adjust as needed. Simmer for 20 – 30 mins, or longer, depending upon taste. Once completed, add the fresh chopped basil.
Meatball Directions:
In a medium bowl, combine the ground beef, Italian sausage, egg, garlic, shallots, Parmesan Reggiano, dried oregano, Kosher sea salt and the cracked pepper. Mix thoroughly.
In a nonstick pan set to medium-high heat, add enough olive oil to cover the bottom. Gently add the meatballs, rotating frequently to brown all sides. Add 1 to 2 slices of provolone on top of each meatball.
Turn on the broiler. Quickly toast the buns directly on the rack. Remove.
Next, transfer the pan with the meatballs and provolone to the top rack of the oven and allow the broiler to melt and slightly brown the cheese. Keep an eye on it so it doesn’t burn, it browns quickly depending upon your oven.
Using a large spoon, scoop out one meatball and place on slider bun. Next, scoop a heaping spoon of awesome marinara sauce and place on top of meatball.
