This is an old time favorite
My modified South German/Italian Potatoe Salad style came out very well. Along the way I learned that it is true the Red Potatoes are more firm hold together which is better for making a Potato Salad.
How to make it Instructions& Ingredients:
It’s best to use Red Potatoes boiled in water and Pink Himalayan Sea Salt to 85% done. Control firmness with fork or knife or metal SS Chopstick. Promply carefully remove the potatoes from the boiling water and either place potatoes asside for Air cooling or submerge under Cold Water to cool off the Potatoes.
Once the potatoes are cooled off Carefully cut them into slices or the shape you want.
Next in a frying pan, add Sunflower, Olive or other good cooking oil. Add at least one good quality cleaned Sliced or chopped up Onion,Chopped up Celery, optional Sweet or Hot Chopped up Peppers. Add Ground Pepper, Trader Joe’s Cuban Citrusy Garlic Seasoning Blend Mojo spice, Hungarian Sweet or Hot Paprika, Dijon Mustard, White Vinegar, Red Wine Vinegar,Balsamic Vinegar ,Pink Himalayan Sea Salt 2 or 3 packs of Raw Sugar and Fried Bacon cut into small bits, ( Kitchen Scissors) work well to cut the bacon into small pieces.
Cook for 15 to 30 minutes. Add opional cut up pre cooked Bacon bits and then the sliced/diced Red Potatoes.
Carefully intermix all ingredients cook for 5 to 10 minuets. Eat it warm or cold it’s good stuff!
Store the remainder in containers in the refrigerator.
