My very own Italian Meatballs with Spicy Rice. A simple, delicious one pot recipe that everyone can enjoy.
Ingredients for Meatballs
250g mince mutton
1 egg
1 and half teaspoon salt
1 teaspoon black pepper
2 garlic cloves minced
1 teaspoon oregano
2 garlic cloves minced
2 tablespoon plain breadcrumbs
2 tablespoon parmesan
2 tablespoon fresh parsley
1 tablespoon extra virgin olive oil
Spicy Rice
2 tablespoon butter
2 garlic cloves minced
1 onion
2 teaspoon red chilli flakes
1 teaspoon paprika
1/2 teaspoon cumin
1 teaspoon turmeric
1 and half teaspoon salt
1 teaspoon black pepper
2 cup basmati rice
1 cup vegetable stock
1 carrot
1/2 cup yellow pepper
Instructions
Mix the mince with the ingredients listed above. Gently mix, overworking it will make the meatballs tough. Refrigerate for at least 30 mins.
Then make your meatballs, slightly bigger than a ping pong ball.
Add three tablespoon oil and fry the meatballs until 80% cooked. Will take around 9 minutes. Remember to make sure meatballs are cooked on all sides.
On same pan add two knobs butter.
Add garlic and fry for 30 seconds
Add onions and fry for 3 mins
Add spices and fry for one minute
Add vegetables and fry for 45 seconds
Add rice (wash and soak for at least 15 mins)
Cook for 3 mins
Then add 1 cup vegetable stock
Mix and cook for one minute
Then add boiling water. Fill 1 inch above surface of rice.
Place meatballs on top.
Tufn on high heat and cover with lid for five minutes.
After five minutes, gently stir everything.
Then cook on low heat for 8 to 10 minutes until rice is cooked. Then take off cooker and let it stand for 5 mins with lid covered.
Serve and enjoy.
