Hello everyone. We are back and ready to show you how to make another easy and simple to dish that you can make at home. In this video, we will be making a Sausage White Bean and Spinach Soup. This is so simple to make and so good to eat.

Here’s what you will need:

1 pound ground Italian Sausage (I use a mixture of mild and hot. You can use either one, or both)
1 tablespoon olive oil
1 yellow onion diced
6-8 cloves garlic minced
6 cups vegetable broth (or stock)
15 ounces can diced tomatoes (drained) (For a richer flavor, you can use fresh tomatoes)
1 teaspoon sugar
1 tablespoon Italian dried herbs
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 (15oz) cans white beans (cannelloni beans), drained and rinsed
4 cups baby spinach (about 6oz)
3/4 cup fresh grated Parmesan cheese (for serving)
3 tablespoon chopped fresh flat-leaf parsley

How to make it:

In a large skillet, cook ground sausage until browned, then drain and set aside. In a large pot or saucepan, heat olive oil over medium high heat. Add onion and garlic and cook until onions are translucent and garlic is fragrant (2-3 mins), while stirring occasionally.

Add in the broth, tomatoes, sugar, Italian herbs, salt and pepper.

Bring to a boil, reduce heat and simmer for 5 mins to combine all of the flavors together.

Stir in the beans, cooked sausage and spinach. Continue to simmer gently until the spinach has wilted (about 2 mins).

Take off heat and stir through the parmesan cheese. Taste test and adjust with salt and pepper if needed.

Serve immediately.
