E27 Cooking Diaries: Fettuccine Alfredo

It’s been a while since our last video, the Holidays put us behind a bit. We’re back though with a recipe that I think everyone would like to see. It was one of our most favorite dishes, Fettuccine Alfredo. You will notice this video is a little different in that the preparation of the dish is the main focus of our camera view. I love this recipe because it is quite simple to prepare and has only a few ingredients. Hope you enjoy, it’s why we do it. Thanks Chef Mario ….Please feel free to comment.
Fettuccine Alfredo alla DiBlasi
Recipe:
1 ½ Cup 35% Heavy whipping cream
½ cup grated Parmesan and Romano cheese
8oz fettuccine pasta
1tbsp butter
Salt and white pepper
Pinch of granulated garlic
Preparation:
Pour cream into the saucepan and add the butter, salt, pepper and garlic and heat over medium heat until bubbles form around the outside portion of the saucepan. No more than a few minutes. Add the cheese a little at a time and whisk in to blend and cook a minute or two. The sauce will have thickened, now you should taste it to see if it needs a little salt or pepper or more cheese. Get it the way you like. Cooking is a matter of taste. Boil pasta in lightly salted water and reserve a cup of pasta water. You can use pasta water for thinning your sauce if it gets to thick. Ladle sauce onto the pasta. At this point you can put it in the oven to brown a little. That’s the way I like it.
