Cod Fish in a Puttanesca Sauce

3-4 tbsp olive oil
4 cloves garlic (minced)
1 medium yellow onion (sliced)
4 anchovies (minced)
½ cup kalamata olives (cut in half)
3 tbsp small capers
½ cup white wine
2 pints cherry tomatoes or 1 8 oz. can diced tomatoes
4-6 cod loins
Salt, pepper and hot chilli flakes (to taste)
Parsley for garnishing

In a large saucepan add 3-4 tbsp of olive oil under medium/high heat
Add onion and cook for 2-3 min.
Add garlic and cook for 1 min.
Add kalamata olives, capers, anchovies and tomatoes, reduce to medium heat, cover pan and let simmer for 5 min.
Add salt, pepper and chili flakes (to your liking)
Place your loins in the pan, coat your loins with the tomatoes, add wine, re-cover, reduce heat to low/medium and let simmer for 15 min.
Plate your delicious loin, bathe it in the tomato sauce, garnish with parsley and ENJOY!
