Being Half Italian, I absolutely LOVE my food and especially my PASTA! I grew up in Italy and have learnt how to cook a variety of sauces.
In this video I show you one of my favourite pasta sauces, that I love to make often and, (when we are allowed), when friends come over!

I want to show you that you can make loads of pasta sauces in the same time that the water boils. So NO need for ready pasta sauces.. time for DIY.

This is the RECIPE for this easy and fast pasta dish.

INGREDIENTS:

Penne or short pasta (100g per person)
140g bacon or pancetta
1 onion
1 clove garlic
2 courgettes
Cooking cream
Salt, Pepper, Mixed Herbs
Olive Oil
Parmesan Cheese

Put the water to boil.

Chop the onion finely; cut the courgettes in and then cut into thin circles; cut the bacon into squares. If you have pancetta you won’t have to do anything.

Fry the onion in heated olive oil, then add the courgettes and season with salt, pepper and herbs to please. Leave the courgettes to cook for approx 8 minutes, or until they have cooked.

Then add the bacon/ pancetta. You can either add to the same pan or use a separate one to cook the pancetta in the mean time.

Once the water is boiling, add a big pinch of rock salt, add the pasta. When the pasta is almost ready, add the cream to the sauce. Then add some parmesan cheese to the sauce.

Drain the pasta, and add it to the sauce. Plate and serve with extra parmesan cheese to each dish.

If you’re not a fan of courgettes, you can try the same using different vegetables (mushrooms, peas/ broccoli)
