I asked my wife what she would like to eat if every meal was possible her reply was Massaman curry the real Thai one or lasagne.
I choose the save option plus a mixed salad with the rests of the vegan Greek night.
For the salad
wash and cut romaine lettuce, cucumber and cut avocado
dressing a bit of fresh lemon juice (vinegar also possible) olive oil, salt & pepper
ingredients
9 spelt lasagne sheets

1 onion
garlic
200gr plant based minced meat
250gr carrots
1 can of chopped tomatoes
100ml tomato juice

for the bechamel sauce
50gr flower
plant based butter
400ml alternative milk (oat or almond)

preheate the oven to 200C
chop the onion and garlic. cut the carrots.
let the onion and garlic fry until they sweat throw in the carrots and the minced meat let them fry 2 minutes add chopped tomatoes and tomato juice or tomato sauce (about 700ml altogether) let it cook
(you can apply some spices like salt pepper nutmeg oregano and cinnamon)
melt the butter or margarine (medium temperature) add the flower slowly while stirring and the milk until it all becomes a nice sauce.

You can apply some oil (butter) in the casserole but I found it not necessary.
then start with a bit of Bolognese sauce on the bottom
put the first row of lasagne sheets on then Bolognese sauce plus bechamel sheets add until the top is filled with bechamel evenly
throw it in the oven for about 20 minutes
