Stuffed Clams and Mussels Cozze Gratinate
Ingredients:-
2 lbs mussels and 12 Clams about 1 pound (900 grams and 450 grams)
3 cloves of garlic
1/3 cup Fresh parsley
2 cups of unflavored breadcrumbs
Fresh cracked black pepper to taste
1/2 cup total Extra virgin olive oil
1/4 cup white wine
Fresh lemon to garnish
Directions:-
Step#1. Rinse clams and mussels. Remove the beard from the mussels. Discard any open ones.
Step#2. In a large pot over medium heat add clams/ mussels, white wine and fresh crushed pepper. Place a lid on top and as the shells open remove to a bowl. Do not cook through.
Step#3. Reserve the liquid and filter through a paper towel.
Step#4. Mix the breadcrumbs, garlic and parsley.
Step#5. Slowly adding extra virgin olive oil but retain some to add on top once stuffed.
Step#6. Add your juice to obtain a moist mixture. Taste to adjust salt and pepper ( I usually don’t add any salt because the clams and mussels have their natural sea salt).
Step#7. In a cookie sheet lay the shellfish on half shell.
Step#8. With the help of a spoon fill each one with breadcrumb mixture and gently pat down. 9. Once all filled drizzle with remaining extra virgin olive oil and bake in a 375 degrees Fahrenheit (190 Celsius) for 15 minutes.
Step#9. Switch to broiler and cook additional 5 minutes until golden on top.
