See below the ingredients and directions for Spaghetti with Clams – Italian Recipe “Spaghetti alle Vongole ” – Spaghetti with Manila Clams.
Ingredients:- ( for approx 4 people ).
2 lbs of Manila Clams.
6 tablespoons of extra virgin olive oil.
2 cloves of garlic sliced.
1-2 chili peppers or 1 tsp chili pepper flakes(optional and based on your taste).
Small bunch of fresh parsley (chopped).
1/4 cup white wine.
1 lb of spaghetti.
Directions:-
Step#1- Soak your Manila clams in salt water for about one hour. Rinse and set aside.
Step#2- Place a large pot filled with water on high heat.
Step#3- In a large sauté pan add your oil, garlic, and chili pepper. On medium heat let the garlic sauté to a golden color. Add clams and wine, as they open remove the shells. ( I usually remove about 2/3 of the shells and just keep a few for decoration).
Step#4- Add parsley, lower your flame not to dry out the juice.
Step#5- When water is boiling salted to taste and add spaghetti and let it cook under al dente.
Step#6- With the help of tongs add your spaghetti right to the sauté pan and raise the heat.
Step#7- Stir for a couple of minutes until all well amalgamated. Add a ladle of pasta water if needed.
(This meal is prepared in less than 15 minutes of cooking time).
