Ricciarelli are traditional biscuits from Siena, in Tuscany. The area is very close to the famous Chianti hills, the ones that give their name to the popular Italian wine.
There’s nothing better, during holidays, than baking something like this… the smell of almonds and orange will spread all over your house giving it a warm, festive atmosphere.
It’s a quite easy recipe and you will need just a few ingredients.
It is important to let the dough sit in the fridge for 5 hours or overnight though, otherwise it will be difficult to work it with your hands.

WHOLE PEELED ALMONDS 1 2/5 cups
VANILLA FLAVORED POWDERED SUGAR 5.7 oz (plus some more for the coating)
CANDIED ORANGE ZEST 1 tbsp (OR grated zest of one orange)
EGG WHITE 1.6 oz
ALMOND FLAVOR
SALT
CORN STARCH
INGREDIENTI (circa 16 biscotti):
MANDORLE PELATE 200 gr
ZUCCHERO A VELO VANIGLIATO 160 gr (e un po’ per rivestire i biscotti)
ARANCIA CANDITA 15 gr (O buccia grattugiata di un’arancia)
CHIARA d’UOVO 45 gr
