If you’re playing tug of war between the choice of meatloaf or Italian sausage tonight for dinner, I have one question for you – Why not both? In this recipe I combine the two to create a delicious, lean meatloaf loaded with your favorite Italian sausage flavors.
How to make Italian Sausage Meatloaf:
1lb Pork Loin or Pork Shoulder (ground or unground)
1 tsp crushed fennel seeds
1/2 tsp crushed peppercorns
1 tsp Italian seasoning
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 cup fresh parsley
1/4 cup grated parmesan
1/2 oz red wine
Salt to taste
Directions:
1) Preheat oven to 450F. If using whole, prepare 1 lb of pork loin or shoulder by trimming off fat or unwanted parts. Dice into small cubes. Blend in food processor or meat grinder until finely ground. If using pre-ground pork, skip this step.
2) Add all dry ingredients. Add red wine. kneed until all ingredients incorporated – about 2 minutes.
3) Mold mixture on baking sheet into loaf shape about 3″ tall. Bake in oven until internal temperature reads 170F. Let rest for 10 minutes. Serve. Feeds 4-6.
