This recipe is a delicious dish with Dove or Quail , spare ribs, Italian sausage over fried polenta!
You can use this recipe with any Wild Game if you wish !

Ingredients
Garlic – 5 cloves
Rosemary – Crushed -4 TBSP
Pepper – 1 TBSP
Salt – 2 TBST
Basil – 2 TBST
Parsley Flakes – 2 TBSP
Season salt- (optional)- 3 TBSP
Sage -( optional) – 1 TBSP
Polenta – 1 tube -( pre made )
Parmesan cheese – 3 TBSP
Olive oil- 1/2 cup -( or any oil you prefer )
Butter – 2 TBSP
Tomato paste – 3 – 6 oz cans
Dove or Quail breast – 12
Spare Ribs- 3-4 Lbs
Italian Sausage links hot or mild – 5
Sugar -1/4 cup or to taste
6 cups of water

Cooking pan used for this dish

18” x 12” x 3”

Aluminum foil to cover pan while cooking Very Important ! This will lock the flavor and steam the Meat so that it will fall right off the bone!

Prep

Start by Rubbing down your spare ribs and Dove or Quail with the salt , pepper, garlic,sage (optional ) and rosemary so that marinates for an hour. Cover and put in fridge.

Put 6 cups of water with your Tomato paste In the 18”x12”x3” cooking pan and mix The tomato paste in water until the paste dissolves. Also add the Basil and sugar and Mix well

Cooking

Brown all meat with olive oil , place the spare ribs , Italian sausage then you’re Doves or Quail in a Pan and brown before you place in your cooking pan with the Tomato paste and water mix. And member to add all the drippings right into your cooking Pan with the tomato paste ! all that leftover garlic,rosemary salt and pepper with the olive oil will give it a great taste!

After placing all of your Meat into the cooking pan you then have to cover the entire pan with aluminum foil so there is no air leaks at all ! It helps lock in that great flavor and helps the meat to steam and fall off the bone!

Cooking temp and time

350 degrees

2 hrs.

After everything is cooked now it’s time to fry the Polenta !

Cut the Polenta in 1/2” Pieces and fry in a pan with butter and Olive oil until light brown.

Place the Polenta on a Serving plate with the Doves, Quail, Spare Ribs and Italian sausage, sprinkle with parsley flakes and some Parmesan and you’re ready to enjoy it !!
