In this episode, Nonna poaches up thinly cut chicken breasts in a delicious olive oil and wine base, seasoned with capers, rosemary, onions, and garlic. Owing to the thinness of the cutlets, they cook up super quick.

Ingredients:
– 1 kg chicken breasts
– 1/2 cup of extra virgin olive oil
– 4 garlic (smashed)
– 2 cups of diced onion
– 1/2 cup of capers
– 1 cup of white wine
– 5 sprigs of rosemary
– salt and pepper to taste

Heat the olive oil in a frying pan. Once hot, add in the garlic and then the chicken breasts. After a few minutes, flip the chicken and add the onions, capers, and wine. As it simmers, add in the rosemary, salt, and pepper to taste and cover for a few minutes to bring out the flavors.

Nonna Mia made a bed of baby spinach and placed the chicken and its sauce/toppings on top to make a lovely, light, and healthy warm salad. However, you can serve this any way you wish – on rice, or pasta, or vegetables.
