recipe:
Ingredients for 3 people
240 gr. pasta (you choose the shape!)
3 egg yolks
2 tablespoon of aged pecorino (cheese made with sheep’s milk)
you can use parmesan or a 50% mix of two cheeses
40 gr. bacon
black pepper grated over dish
Procedure:
Fry bacon in olive oil at low heat.
Cook your favourite pasta shape in boiling salty water and
keep aside some cooking water.
In a little bowl mix eggs with grated cheese
and sprinkle grated pepper.
Drain pasta cooked “al dente”
drop pasta in the pan and mix to make
the pasta well oily.
With the heat off, add egg sauce, now
mix well to make pasta creamy.
It’s ready, serve at the table quickly!
Add grated pepper on top
of individual dishes.
