Ingredients:
4 pieces of salmon
1 garlic clove, minced
4 cups fresh spinach
4-6 oz. julienne sundried tomatoes in italian herbs oil
splash cooking wine (marsala)
4 tbsps extra virgin olive oil
red peppers flake (optional)
capers (optional)
salt & pepper
Instructions:
1. Heat 4 tbsp. in pan o medium- high heat
2. Season salmon with salt & pepper on both sides and add it to hot oil.
3. Turn Salmon when a bit crusty on each side. Be sure not to overcook the salmon @ this point.
4. Transfer salmon onto a plate with paper towel.
5. Add splash of cooking wine to pan & deglaze.
6. Sautee until garlic is tender.
7. Add spinach , too around, put lid on for a few mins.
8. Add sundried tomatoes then put salmon back to the pan & coat with the sauce.
9. Eat & enjoy 🙂
