Leftovers pie
Basic ingredients for the pie:
500g (3cups+2tbs) flour
5 eggs
150ml (2/3 cups) olive oil
250ml (1 cup) milk
100g (1 cup) grated parmigiano
2 tsps salt
1 pouch (15g) (1, 1/2 tbsps) instant yeast *
* (you can substitute the instant yeast with 1 tbsp baking soda and 1 tbsp of lemon juice or white vinegar) add the baking soda to the flour and the vinegar or the lemon juice to the mixture

Filling:
500g (18oz) of leftovers such as:
Cooked vegetables (such as onions, carrots, broccoli, cauliflower, courgettes, aubergines, leeks, mushrooms, peas, green beans, olives and so on)
Cheese (anyone) you can also mix different types
Cold cuts
Baking time:
Preheated ventilated oven:
180C/338F for 50/60 min
Every oven is different check the pie for doneness by using the toothpick test.
If there is wet batter still on the toothpick, it needs more time in the oven.
If it comes out clean, it is done!
