#Ratatouille
Full of goodness and colourful Mediterranean vegetables, a magnificent dish for any table!
Ratatouille makes an excellent main meal or it can accompany meat or seared fish, and best of all it can be served hot or cold. You can make this dish well in advance, it can be served on bread, as a cold salad, or even as a pizza topping.
Originating in Nice (south of France), this DELICIOUS dish was considered peasant food but is one that has truly stood the test of time. A true TASTY classic, it’s full of wonderful colours and so versatile your options are endless.
As with most classic dishes everyone has their own special recipe passed down the generations, you are always free to experiment and find your own unique taste.
This dish is so renowned it is celebrated by Disney Pixar in an animation movie.

For this recipe you will need:
Serves up to 6
• 1 aubergine (egg plant)
• 1 courgette (zucchini)
• 1 red bell pepper
• 1 yellow bell pepper
• 1 red onion
• 2 garlic cloves
• 2 bay leaves
• 2 sprigs fresh basil
• 1 tsp fresh thyme
• 2 tsp fresh oregano
• 1 tsp salt
• 500g plum tomatoes
• 150ml vegetable stock
• 100ml dry white wine
• 30ml passata
• black pepper (to taste)

Ratatouille is a classic fresh dish that has a wide range of delicate flavours with a touch of sweetness. Wines that will go well with Ratatouille are wines with low acidity, a good variety of aromas and could be medium dry.

I also recommend a good full flavour and fruity IPA beer to go with the Ratatouille.
