INGREDIENTS
250 Grams of fresh tonnarelli (or spaghetti alla chitarra, or spaghetti)
2 or 3 tsp. freshly ground black pepper
2 cups of grated Roman Pecorino Cheese
INSTRUCTIONS
1. bring to boil slightly salty water in a large pot; add pasta and cook for 5 minutes if fresh, otherwise read the cooking time on the box.
2. Meanwhile, add the pepper in a large pan and toast it for 2 minutes
3. When cooked, switch off the stove and add the pasta to the pan and start incorporating the grated cheese and the water used to cook the pasta. Energetically mix the cheese with water and pasta till it melts to create the characteristic cream.
