Here we have a Phamtastic version of a traditional bolognese pasta. Bolognese means meat sauce in Italian. Take traditional methods and let the sauce simmer to thicken up on any style pasta. We use farfalle here, but any works. Then adding in some spicy gochujang paste and a South African Wine you can’t beat this easy weekday dinner! Cooked in an Instant pot as well!
INDEGRIDENTS
• 1 pound ground American waygu
• 1 pound ground Italian sausage
• 1 large white onion diced
• 1/4 cup finely diced carrot
• 1/4 cup finely diced celery
• 1 cup chopped spinach
• 1 tablespoon minced garlic
• 6 ounce can tomato paste
• 28 ounce can crushed tomatoes
• 1 cup beef broth
• 1/2 cup white wine
• 1/4 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1 tablespoon spicy gochujang paste
• 1/2 cup chopped fresh basil (optional)
• 1/4 cup chopped fresh parsley (optional)
• 1 teaspoon dried oregano
• 1 cup whole milk
INSTRUCTIONS
• Set Instant Pot to sautee. Add in sausage and waygu. Use a spoon to break up the meat into small pieces. Brown 5 minutes. Drain off any excess grease.
• Add in onion, carrot, and celery and cook another 5 to 7 minutes until onions are soft and meat is cooked through.
• Add in garlic and tomato paste, spicy Korean gochujang paste combine well.
• Pour in crushed tomatoes, white wine, beef broth, and milk. Stir in fresh basil, parsley, and oregano and season with salt and pepper.
• Stir well and bring to a simmer. Cover lid and put on high for 30 minutes. Or cook on low simmer for 1-4 hours. Turn valve on release.
• Taste and add more salt and pepper. Add in once cup chopped spinach after.
• Add in 1 teaspoon oil and pinch of salt to boiling water. Cook farfalle pasta till al dente.
Using Arra Vignoier from South Africa. Any dry wine will work. This will be a great addition to any weekday dinner with unique twist on a classic Italian staple!
