Ingredients:
For Cream Cheese Filling:
1/2 cup Cream Cheese :
1/2 tsp of Mixed Herbs/ Oregano
Salt as per taste
1/4 tsp of Garlic Powder
For the Tomato Filling:
4 Medium Sized Tomatoes
2-3 tbsp Olive Oil
1 tsp of Mixed Herbs or Oregano
2 tbsp of Ketchup
Salt as per taste
1 tsp Black Pepper
1/4 tsp of Garlic Powder/ 2-3 Garlic cloves
4-5 Basil Leaves, Optional you can use dried powder as well.
Note:
* If you want to make this more healthy, go ahead and add in more veggies in the filling like capsicum, avocado, onions, cabbage and any other ones as per preference.
* You can skip the Cream Cheese spread if you are trying for vegan bruschetta.
* You can also skip Ketchup, it just adds a bit more red colour and slightly tart taste to the tomatoes stuffing. You can add in lemon juice instead.
* You can use any other herbs like rosemary, dried basil, chives, thyme, parley, corriander etc.
* Also to make it more fancy you can spread in some grated cheese on top.
