Ingredients:
1 Eggplant- Peeled and Sliced Thin.
For Breading The Eggplant
4 Extra Large Eggs
1 1/2- 2 Cups AP Flour-as needed
2-2 1/2 Cups Flavored Bread Crumbs-as needed
1/2 Tsp each of the following
1/4 Tsp of each- Salt, Black Pepper, and Granulated Garlic-
The seasoning gets mixed into the flour.
For Filling:
2 pounds Ricotta
8oz. Mozzarella- Shredded
4 Extra large Eggs or 5 Large Eggs
3/4 -1 Cup Bread Crumbs- as needed
1/4 tsp of each – Salt, Black Pepper, Granulated Garlic, Dried Basil, and Dried Oregano
For the Top
About 2 (24oz each) jars of your favorite sauce (48 oz total)
This should be enough for everything in the recipe-bottom, top and inside the Rollatini
6-8 oz Shredded Mozzarella
