LINGUINE WITH CHICKEN & GOAT CHEESE

INGREDIENTS:
* 16 oz package of linguine
* 2 boneless, skinless chicken breasts (cut into bite size pieces)
* 5-6 cloves garlic (minced)
* 1/2 jar sun dried tomatoes (drained and chopped)
* about a dozen basil leaves (chopped)
* 1/2 cup white wine
* 1 cup chicken or vegetable broth
* 2 TBLSP butter
* goat cheese (crumbles or whole)
* 1/4 cup olive oil (separated)
* salt & pepper
* crushed red pepper flakes
* grated parmesan cheese

DIRECTIONS:
* cook linguine according to package directions
* in a large skillet, heat half of your olive oil on medium high heat
* sprinkle chicken with salt & pepper and sautƩ for 3-4 minutes
* add wine and garlic to the chicken and scrape up any chicken bits on the bottom of the pan
* add the broth and bring to a boil
* add butter, basil and sun dried tomatoes and allow to simmer for 3-4 more minutes
* place strained pasta into a serving bowl, drizzle with the rest of the olive oil, sprinkle with salt & pepper and toss
* pour finished chicken mixture over the top
* place in individual serving dishes and top with crumbled goat cheese, crushed red pepper flakes and grated parmesan as desired
