Recipe:
Lasagna (In Italian “lasagna” is singular, “lasagne” plural).
Ingredients, doses for 4 people:
– For fresh pasta
100 gr. whole wheat flour
100 gr. flour
2 eggs
half a teaspoon of salt
– For the Ragù Sauce refer to our video “Ragù Sauce”
– For the bechamel
30 gr. butter
30 gr flour
enough milk to make it creamy
half a teaspoon of grated nutmeg
——— Making fresh pasta ———————————-
(Note: Obviously there are ready-made lasagna in supermarkets,
you can use those, avoiding making fresh pasta.)
Make fresh pasta by putting all the ingredients
in a blade mixer.
Activate it for a few seconds, at intervals, observing
how the ingredients come together quickly,
until it forms into a kind of ball.
When you get to this point the dough is ready.
Remove it from the mixer and let it rest in the fridge wrapped
in transparent film for half an hour.
After this time, roll out the dough first
by hand, then use a roller dough machine
with which to make the dough thinner and thinner
with more successive passes adjusted to
smaller thicknesses. The thickness should be
between 1 and 2 millimeters (optimal 1.5 mm).
Cut the strips of dough, which are precisely
called lasagna, adapting them to our baking sheet.

When the pasta is so fresh, just wet it
in hot water before placing them.
It is not a problem, if the shape or size is not exact,
place several pieces next to each other, avoiding
overlaps.
follow this sequence:
under the first layer of lasagna:
spread just a little béchamel (others use butter).
For each layer lasagna layer (except the last one)
1 Lasagna
2 grated Parmesan
3 sauce Ragù, only in spots, do not cover everything.
4 a few slices or pieces of mozzarella, do not cover everything.
5 a few tablespoons of bechamel sauce, only in spots, do not cover everything.
For the last layer all the same, except you don’t have to put
mozzarella and perhaps the most abundant bechamel.
The number of layers depends on the height of the sides of your
baking pan, it can be between 3 and 5. The ideal is 4 layers.
(In the video it’s just 3 layers)
Bake at 180 ° C (in a preheated oven) for around 30 minutes.
Once removed from the oven, allow to cool 10 minutes
on a wooden cutting board, before serving.
At the table bring the baking pan, cut some
rectangular portions with a flat scoop and put on plates.
