This video is my digital composition for my EDUTL 2367 (second year writing) class. I chose to make a cooking video because the theme for my final multi-genre project is travel, and I ate Cacio e Pepe when I traveled to Italy last year. Thank you for watching!

Recipe
6 oz. pasta (spaghetti)
2 Tsp. olive oil
1 Tsp. freshly ground black pepper
A pinch of salt
1 cup of grated parmesan or pecorino cheese

Instructions
1. Bring water to a boil
2. Add 1 teaspoon of olive oil to a large non-stick pan over medium heat. Swirl the pan until the pepper is toasted. This will take approximately 1 minute.
3. When the water boils, season it with a pinch of salt and add the pasta. Let the pasta cook for 2 minutes less than what it says on the packaging.
4. When the pasta is al dente, set aside 1 cup of the starchy pasta water and drain the rest of the water.
5. Add ½ cup of the reserved pasta water to the pan that has the toasted pepper, and bring to a simmer.
6. Add the pasta to the pan and the remaining 1 teaspoon of olive oil.
7. Reduce the heat to low and add 1 cup of parmesan or pecorino.
8. Use tongs to keep stirring the pasta until the cheese fully melts and becomes a sauce. You are able to add more pasta water to the pan until the sauce is at your desired consistency.
9. Transfer pasta to a bowl and enjoy! Bon Apetit!
