Tomato Butter Spaghetti:
Ingredients
Pasta cooked 1 packet
Butter 4 tbsp
Oil 2 tbsp
Garlic minced 1 tbsp
Tomato puree 2 cup
Taco seasoning 1 tsp
Bay leaf 1
Salt to taste
Black pepper 1 tsp
Chopped fresh basil for garnish
Method:
Heat butter with oil in pan. Add garlic sauté well. Add tomato puree, taco seasoning and bay leaves simmer sauce stir continuously. Remove bay leaf mix salt and black pepper. Add cook pasta toss well. Sprinkle basil, serve.
Margarita Prawn Skewers:
Ingredients:
Shrimps 300 gm
Lemon juice 3 tbsp
Lemon zest 1/2 tsp
Oil 1 tbsp
Vinegar 2 tsp
Garlic minced 3 cloves
Cilantro, chopped 3 tbsp
Salt and pepper to taste
Paprika a pinch of
Bamboo skewers as required
INSTRUCTIONS
Whisk together lime juice, zest, oil, vinegar, garlic, cilantro, salt paper and paprika in a bowl pour marinade over shrimp, shaking to combine. Allow shrimp to marinate in the fridge for at least 30 minutes. Preheat grill on medium to high heat, making sure to lightly spray with oil to avoid sticking. Pierce shrimp onto the bamboo skewers. Place the skewers on the grill, cooking shrimp about 2 to 3 minutes each side. Serve and enjoy!
Coconut Rice:
Ingredients
Rice 2 cup
Coconut milk 1 cup
Water 1- 1/2 cup
Salt 2 tsp
Toasted sesame for garnish
For Tempering:
Cumin 1 tsp
Whole red chilies 2-3
Green chilies 2-3
Oil 2 tbsp
Cashews 4-5
Curry leaves few
DIRECTIONS
heat oil add rice, coconut milk, water and salt boil well. Cover and cook on low flame for 18 to 20 minute leave for simmer. For tempering heat oil in separate add tempering ingredient to prepare it. Pour on rice, garnish with sesame seeds.
