Recipe:
Gnocchi Bolognese
Cook Time: 1 ½ hours
Servings: 8
Ingredients:
1 lb 80/20 ground chuck
½ lb spicy Italian sausage
1 tbsp olive oil
1 large carrot
2 celery stalks
½ large onion
1 cup dry white wine
1 6 oz can tomato paste
2 ½ – 3 cups chicken stock
½ teaspoon nutmeg
Generous pinch of salt
¼ cup heavy cream
2-3 bags Trader Joes Cauliflower Gnocchi (prepared)
¼ cup grated parmesan (for garnish)
Instructions:
1. In a large deep pan on medium heat add ground beef and ground sausage. Crumble with a wooden spoon and cook until 90% browned (about 7-10 minutes). Remove from pan.
2. Blend carrot, celery, and onion into a fine paste to create mirepoix. Add olive oil and mirepoix into the skillet and cook down until the water has evaporated. Add salt.
3. Return meat into pan and add white wine. Combine and simmer for a few minutes to cook the out the alcohol. Add tomato paste and mix around to thoroughly incorporate. Allow to cook for 10 minutes.
4. Add nutmeg and pour in chicken stock. Simmer on medium low for about an hour.
5. Serve over prepared gnocchi or pasta of choice. Sprinkle with parmesan.
