Classic Italian Pesto Recipe: No need for store-bought pesto sauce anymore. Save your $5 for something else.😉 This recipe is so easy and takes only 5 minutes to make it. Cool, isn’t it? Checkout the full recipe below.
Ingredients:
2 cups Fresh Basil
1/3 cup Pine nuts ( if it’s hard to find pine nuts, you can substitute it with cashew nuts)
1/2 cup Olive oil
2 cloves of Garlic
1/2 tsp Salt (add extra if needed)
1/2 tsp Pepper
Lemon Zest of a quarter lemon
2-3 Tbsp Lemon Juice (I add extra lemon coz I like my pesto a bit tangy, you can stick with half a lemon of authentic flavor)
1/3 cup freshly grated Parmesan
Instructions:
1. Toss the pine nuts for a couple of minutes in a flat skillet.
2. Now put the basil along with the pine nuts in a food processor, and a spoonful of olive oil to ease the blending. You add the ingredients to a big bowl and use a hand blender/grinder.
3. Now roughly slice the garlic, add the lemon juice, salt and pepper and pulse the blender for 30-60 secs.
4. With the machine still on add the remaining olive oil in a slow stream until emulsified.
5. Scrape down the sides with a rubber spatula and add the Parmesan cheese, mix well.
Please note: DO NOT USE WATER AT ALL.
How to store it: If you want to store the pesto, just omit the cheese and store it in an airtight container in the refrigerator for up to 1 week. Add the cheese whenever you wish to use the pesto.
How to use it: Toss it with pasta for a quick sauce, put a dollop over baked potatoes or chicken, or spread onto crackers or toasted slices of bread/sourdough.🙂
