The Carbonara
This video is dedicated to my middle child because when she was just 4 years old, she hounded me to teach her how to cook carbonara. Iβm laughing as I write this because it brings back fond memories… There wasnβt a country where we went holidaying where she did not ask to eat carbonara… So therein began my quest to write a recipe simple enough to teach a 4 year old kid.
Itβs not that we donβt have a (good) recipe to teach her, in fact we cook carbonara at home every two weeks! But I wanted something which says like βSarahβs Carbonara Fourβ, for me to remember she asked for it at 4 years old, and the criteria is that it must be delicious and easy enough to teach her.
I think I nailed it when she said : βItβs not delicious…… (pause)…. itβs AWESOME!!β π₯³π
So finally, three years later, I have it!
Albeit late, but better late than never! Especially since itβs awesome with just four main ingredients…!
Eggs
Parmesan Cheese
Pancetta/ Bacon
Butter

This is authentically Italian, with no cream and no chicken stock! And remember to keep the fire at itβs lowest once eggs go in, and switch the heat off after you stop stirring else it may become scrambled eggs! π

Sarahβs Carbonara Four
Recipe: Serves 2
4 Main Ingredients:
EGGS: 2 whole + 1 yolk
PARMESAN CHEESE: 60-80g
PANCETTA/ FATTY BACON*: 150g chopped
BUTTER: Salted, 15 g
Keto low carb Pasta**:
1.5 – 2 pack oat fiber fettuccine
1 tsp salt
Other ingredients:
1 tbsp oil
1 clove garlic
Truffle oil/ paste
Black pepper to garnish
*Pancetta is hard to find in Singapore so I replaced with the βbacon bitsβ product in my video which is available in major super markets.
