Panzanella is a traditional Tuscan summer salad, and originally a peasant’s meal. It’s basically made of tomatoes, bread, vinaigrette, and whatever vegetables are available. I personally prefer sweet bell peppers and cucumber because the mix of colors makes this salad extra pleasing to the eyes. Adding some herbs gives another layer of flavor to it. In the warmer months, I garnish this with basil chiffonade.
