*Sauce:
*700g beef mince 10% fat
* 2-3dl dry (italian) white wine
*1can of mutti passata
*1can of mutti pelati (or crushed tomatoes)
*3tbs dried oregano
*200g pancetta
*1 medium onion
*1 big carrot
*2 stalks of celery
*1 “mutti can” of water
*Salt/ Pepper to taste
*
*Pasta:
*EGG dry tagliatelle 500g
*5 litres Water
*50g coarse sea salt
*
*Rule of Thumb for pasta cooking:
*1000ml water / 100g pasta / 10g salt = ” 1110-rule”
*remember that and you will always make good pasta!
