This delicious stew is perfect for cold weather! INGREDIENTS
2 15-oz cans of chickpeas
1 lb Italian sausage
2 bell peppers, chopped
1 medium yellow onion, chopped
4 cloves garlic, grated or diced
4 oz cooking sherry
1 tbs tomato paste
8 oz tomato sauce
Italian seasoning to taste
Salt to taste
2 tbsp olive oil
Parsley
RECIPE
Remove sausage from casing and brown in pan. Push the sausage to one side of pan and pour in olive oil. Add onions and sweat until onions are translucent. Add chickpeas and cook for about 5 minutes. Add garlic, stir. Add salt, Italian seasoning, stir. Add tomato paste, stir. Deglaze with cooking sherry. Add the tomato sauce, stir, and cover with lid. Stew for 10-15 minutes. Add bell peppers and cook and additional 10 minutes. Optional: top with parsley and serve with garlic bread.
