A spruce-infused pale ale, Pennsylvania Tuxedo pays homage to the flannel-suited hunters and gatherers who dwell deep in the backcountry of north-central PA.

Brewed in collaboration with family-run outdoor clothing company Woolrich, Pennsylvania Tuxedo is a sessionable concoction with a grassy citrus kick complemented by the resinous conifer notes of fresh green spruce tips. We went into the forests of north-central Pennsylvania and Georgetown, Del., to pick these fresh tips ourselves.

The History Of Spruce Tip Beer:
In North America, spruce beer was used by American colonists to prevent scurvy.

Spruce tip beer is, in one form or another, a very old style of beer. Back in Colonial times, hops were rare, so the colonists made a beer with molasses and used spruce or fir tips in place of the hops. This is not that beer.

Homebrew Spruce Beer Recipe:

After gathering your spruce, fir, juniper, pine needle tips & or a few branches.
Make a tea by boiling the branches in water for 30 minutes. Strain out the branches and add this homemade spruce essence to your mash or boil. However first make a tea & taste it, next try adding some to a similar style of beer you are making, Pale Ale, IPA, Marzen, Molasses Brown Ale etc… To get an idea of how much of the essence to add. Additionally you could just add the needles like hops to the boil & or at flame out.
* Tip โ€ขAdd up to 4 oz. of fresh spruce tips late in the boil for a pine resin-woody, flavor and aroma.

My Base Beer is a Marzen with a Rye Twist:

Batch Size: 5 Gallons / Recipe Type: All Grain
Approx. Original Gravity: 1.053 – Total Boil Time: 75 min.
Est. IBU: 20-30 Hard to get an accurate IBU rating due to the addition of pine needles also you could add a few branches.
Using the branches is similar to an Italian wine know as Grappa.
Grappa has been around for almost as long as wine has being made, since Grappa is made from the grape pomace โ€“ the skins, pulp, seeds and stems โ€“ that is leftover after the juice has been pressed out and is on its way to fermentation
Grain-Bill
5 lbs Munich Malt . 5 lbs Pilsner Malt. 8 oz. Carapils Malt
8 oz. Rye Crystal Malt

Adjunct:
1/4 lbs. Light Molasses, after first hops addition.
4 Cinnamon Sticks, Dry Hop

Hops
1/2 oz Liberty 10 minutes after Boil Start Time.
1.00 oz Mt Hood. Last 30 min. Boil Time
1.00 oz .Sazz Last 15 min. of Boil Time.

Yeast:
Bavarian Lager Yeast

Mash Instructions
Start the mash by placing milled grains in a clean, sanitized 10-gallon mash tun. Add 2.6 gallons of water thatโ€™s been heated to 132 degrees F. Let it sit for 30 minutes. Add 2.3 gallons of water thatโ€™s been heated to 197 degrees and let sit for another 30 minutes. Add 2 gallons of water thatโ€™s been heated to 205 degrees and let sit for 10 minutes. Drain all the water (wort) through a sparge filter into a clean, sanitized 10-gallon brew pot. Sparge the grains by adding 1.4 gallons of water thatโ€™s been heated to 170 degrees to the grain mixture, let sit for 15 minutes, then drain the water (wort) through a sparge filter into the brewpot.

Fermentation Instructions
Ferment between 53โ€“56 degrees F for four weeks, then siphon into another clean, sanitized carboy and ferment for another three to four weeks at 53-56 degrees.

Prime the beer by combining 3/4 cup corn sugar,

Review:
Evaluation of this Rye Pale Ale – BJCP style was made subsequent to a pour from a 12 ounce bottle into a Snifter Glass.
Served at 45 Degrees F or 10 Degrees C – To Pick up more Aromatics & Flavor Profiles.

However the recommended Serving temp for an American Pale Ale. is 40 to 45 Degrees F & to 7 to 10 Degrees C.

Recommended Glassware, Glass, Tulip, Snifter, Pint Glass. English Style Pub Glass, Pilsner Glass, IPA Glass, Over Sized Wine Glass.

The Review:

Pour : A 1 Finger Off White Head, with nice lacing.

Color: SRM 16.. That of Apple Cider, Deep Amber/Copper

Aroma: Pine Resinous Notes, Citrus, Sweet Bready Malts, Caramel, Toffee.

Taste: Follows the aromatics, sweet bready malts, with notes of ,caramel, toffee, vanilla, with light pine resinous & woodsy notes dancing on the tongue. You have just the right amount of spicy hops to keep the malts in check.

Body: Heavy-Medium Body with light medium carbonation.

Overall: A Beautiful Beer…
