Halloween is near and so all the decorations and typical foods and desserts. These super cute Halloween Ghost Cupcakes will be such a joy for kids and adults. They are easy to make and I’m just telling you they’rere double chocolate muffins and Italian Meringue frosting!
Happy Halloween and let’s see how to make them:
Double Chocolate Muffins:
flour 95g.
cocoa powder 42g.
a pinch of salt
baking powder 1 teaspoon
brown sugar 180g. (or even 150g if you like it less sweet)
2 eggs
oil (corn oil, sunflower seed oil (please avoid flavored oil such as olive oil) 80ml.
heavy cream 100ml.
milk chocolate (chopped) 50g.
optional: a drop of Grand Marnier (if for adults) or vanilla extract (if for kids)
Italian Meringue frosting:
sugar 200g.
water 30ml.
egg whites 100g. (about 3 large eggs used)
a pinch of salt
a few drops of vanilla extract, lemon extract
Instructions:
1. In a large bowl, sift the flour with cocoa powder and baking powder. Add a pinch of salt.
2. In a different bowl, mix the eggs with sugar, a pinch of salt, and oil. Add then the heavy cream.
3. Pour the egg mixture into the flour mix and combine.
4. Chop the milk chocolate and add it to the mixture.
5. Fill the muffin paper cases for about 75% and bake in the preheated oven at 175Β°C for 20 minutes.
6. For the Italian Meringue Frosting, put to boil the sugar with water and wait until it reaches 121Β°C.
7. Meanwhile, slightly beat the egg whites with a pinch of salt using a hand or stand mixer.
8. Once the sugar syrup is ready, add it slowly to the egg white and continue to mix. Mix until the bowl will be completely cold or room temperature.
I prefer to add vanilla or lemon extract to the meringue while mixing so it will get a special flavor.
9. Once ready, decorate the Halloween Ghost Cupcakes and add the small chocolate balls.
This activity can be made together with your kids. They will enjoy it so much. Just pay attention to the sugar syrup!
