Ingredients:

2lb of Ricotta
2lb of Flour (make sure to weigh out the flour)
2 tsp Salt
2 Tbsp Olive Oil
2 Eggs

This recipe will yield 4 pounds of Gnocchi.

As the video shows, blend eggs, cheese, salt and oil. Fold this mixture into the 2lbs of flour. Kneed slightly. Roll into logs and then cut individual pieces, then roll down the fork.

I typically serve my Gnocchi with a meat sauce but creamy pesto is my second favorite.
