With school back in session, it is an easy quick fix that the whole family is sure to enjoy! Also, the Casarecce pasta is a real fun noodle that is always getting overlooked, so we needed to incorporate it!
Prep/Cook Time: 5 minutes/20 minutes
Yields: 4 Servings
Ingredients:
1 lb. Chicken Breast
24 Oz. Pirro’s Pesto Pomodoro
1 Tsp. Salt
1 Tsp. Pepper
1 Tbsp. Olive Oil
16 Oz. Casarecce Pasta
1/2 Cup Parmesan
Basil for Garnish
Cook Casarecce to liking. Take chicken breast and coat evenly with salt and pepper. Add 1 Tbsp. olive oil to heated pan. Cook chicken at medium heat. Once the chicken is cooked through and lightly browned, remove from pan and slice into half-inch thick strips. In a separate pan heat up Pirro’s Pesto Pomodoro. Once simmering, add in chicken and cook for 3-4 minutes. Add in Casarecce and mix. Last, add in parmesan evenly and stir to distribute throughout the dish. Serve garnished with basil. Godere!
