Do you still have a spare bottle of Italian “Vin Santo” from your last Italy trip? Somebody brought you a bottle of it as a souvenir?
In today’s recipe I will show you how to make simple and very “addictive” biscuits to soak into your special wine.
Of course they are good also without wine or combined with a good tea or coffee. 😉
Cantucci originally come from Tuscany and there are different versions in other areas of the country, as often happens in Italy.
In this version I added some Vin Santo to the dough, but feel free to add your favorite sweet liquor or dessert wine (Italian Amaretto is another good option).
They are so good that after filming this recipe I finished eating more than a half of them in a few hours. 🙂

INGREDIENTS (about 28 biscuits):

ALMONDS (unshelled) 4.2 oz
SUGAR 7/8 cup
1 EGG
ALL PURPOSE FLOUR 2 1/8 cups
AMMONIA for CAKES (or BAKING POWDER) 1 tsp
SOFTENED BUTTER 1/8 cup
VIN SANTO 1 shot glass
1 EGG YOLK
SUGAR 1 1/2 tsp (optional)

INGREDIENTI (circa 28 biscotti):

MANDORLE (non sbucciate) 120 gr
ZUCCHERO 180 gr
1 UOVO
FARINA “00” 265 gr
AMMONIACA per DOLCI (o lievito per dolci) 1 cucchiaino
BURRO (a temperatura ambiente) 30 gr
VIN SANTO 1 bicchierino da shot
1 TUORLO
ZUCCHERO 1 1/2 cucchiaino (facoltativo)
