Monday –

Fresh Ingredients Egg Plant Parm.
Preheat oven to 380
1 large eggplant
1/4 cup of evoo plus 3 TB
1 tsp. sea salt divided
3 TB of fresh lemon juice
4 cloves of garlic & 1 small onion minced. (Divided)
1 to 2 pints of grape tomatoes
1/2 tsp. of balsamic vinegar
1/4 tsp. of crushed red pepper
1 pound of fresh mozzarella
2 TB. grated fresh pecorino-romano cheese
Fresh basil
Slice eggplant 3/4 inch thickness
Place in a 9 X 13 baking dish
Whisk the 1/4 cup of evoo, 1/2 of the garlic & onion mixture together. Pour over eggplant to marinate .
Place cherry tomatoes in a casserole dish and drizzle a little evoo on top and bake at 380 until tender (approx. 15 min.), then take out of the oven then add the eggplant dish to the oven for 15 – 20 minutes until tender. In the meantime puree the cherry tomatoes, crushed red pepper, salt, balsamic vinegar & the rest of the garlic & onions.
Once the eggplant is tender top each piece with fresh mozzarella. Cook for an additional 5 – 10 minutes or until melted.
Take the eggplant out of the oven, pour the tomato sauce over and top with fresh pecorino-romano cheese and fresh basil leaves.

Strawberry Jam:
12 oz. of strawberries diced
1/4 cup of sweetener
1/3 cup of water
3 TB of chia seeds
In a small sauce pan combine diced strawberries and sweetener. Bring to a boil until softened and becomes slightly thickened. ( 5 min). Add water and chia seeds and bring to a boil. Cooking 1-2 min. Remove from heat and jar.
