This is an easy chicken recipe requested by my hubby. Bruschetta Chicken Recipe is exactly like the traditional crusty bread version, but instead of bread, I used chicken rubbed with garlic and seasoned with Italian herbs for a lighter meal in minutes. Drizzled with balsamic glaze for an extra punch of flavour that your whole family can feast on. This could be one of those meals I’d like to prepare when dieting, because somehow this chicken has so much flavour that it doesn’t taste like ‘diet food’ at all.
What does bruschetta mean?
Bruschetta (/bruːˈskɛtə/, /bruːˈʃɛtə/, Italian pronunciation: [bruˈsketta] ( listen)) is an antipasto (starter dish) from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese.
INGREDIENTS
For The Chicken:
2 large boneless, skinless chicken breasts
3 teaspoons Italian seasoning
2 teaspoons garlic powder
pepper & salt to taste
1 tablespoon of olive oil (for cooking)
1 tablespoon of butter
For The Topping:
2 Roma tomatoes diced up
1/2 of a onion finely chopped
5 cloves minced garlic
2 tablespoon shredded fresh basil
2 tablespoons olive oil
salt and pepper to taste
½ cup parmesan cheese
3 tablespoon balsamic vinegar
2 tablespoon Italian Seasoning (home made, I will share with you how I made it in a different video)
Balsamic Glaze: (you can use store bought, or home made which I will show you in a separate video)
1/2 cup balsamic vinegar
2 teaspoons brown sugar
