Ciak, the yeast… created by master baker Giuliano Pediconi in 2002.

Our dough is created by spontaneous and natural fermentation between mineral water and a high protein wheat flour from the ‘50s from the Marche Region directly by the famous Paolo Mariani’s Mill.
