Spaghetti alle vongole, Italian for “spaghetti with clams”, is a dish that is very popular throughout Italy, especially in Campania.

Ingredients:
Pasta –
water
salt
spaghetti
Sauce –
4 Tbsp. extra-virgin olive oil
1 garlic clove, thinly sliced
chili garlic
1/2 cup chicken stock or white wine
pre-cooked clams
basil or parsley
How to make:
Pre-cooked spaghetti according to package instructions.
Heat oil in a large skillet over medium heat.
Add garlic and cook, until just golden.
Add pasta to pan.
Add clams and any juices.
Add chicken stock or white wine; bring to a boil.
Add chili garlic, butter (optional) and basil and continue cooking 15 more seconds.
(Add more pasta water if sauce seems dry.) Transfer pasta to warm bowls and drizzle with oil.
Garnish chili garlic and basil.
